I am a firm believer in the power of cheesecake. However, this cheesecake was an accident. I was looking through my Cook’s Illustrated Cookbook for a Beef Wellington recipe. It didn’t have one. So in boredom I started to flip through the index. Since it is fall I looked at pumpkin and there was a recipe for Bourbon Pumpkin Cheesecake with Graham Pecan Crust. How could I say no to that?

I purchased all the ingredients and did the normal Cook’s shuffle. I think the recipe made me add the vanilla extract while standing on my head. All joking aside the recipe was wonderful and it is the finest cheesecake I have ever made. There was also a recipe for Bourbon Whipped Cream which I made to top of the cake. The kids loved it, the Husband loved it, and I loved it.
